Gluten Free Lactose Free Low FODMAP Banana Walnut Bread, oh my

Some may say baking is a craft. So this counts ;)
Several months ago my boyfriend (who has been type 1 diabetic since the age of 1) found out he has a slight gluten sensitivity. To give you an idea about what my boyfriend is like, when his doctor told him of the sensitivity, he told the doctor that it can not be true because, "I'm not a hipster."
Now I LOVE bread. I eat bread with every meal. Especially after find out my first love, cheese, well turns out I'm lactose intolerant. And to make it more complex, we found these two things out weeks before a planned trip to Paris. Fabulous.
Fortunately he is able to eat gluten, he just gets bloated. We do try to eat gluten free when possible. The one thing he missed though, was banana walnut bread. So my mission began.
I did a lot of research (again-nerd) and off to Pinterest.


I found the recipe above via IBS-Health.com. All I did was change the Chocolate Chips to Walnuts and BAM- Awesomeness. Yes you have to do some conversions, but I have already did, so I shall share below.
